Seraphim Shiraz Heathcote 2021

We are so excited about this Shiraz - It has all the definitive characters of the Heathcote region with a depth of beautiful dark fruits, elements of chocolate & baking spices. This vineyard has a distinctive ability to produce elements of savoury herb characters in the wine, which gives it a nice complexity. The finish is mouth filling with smooth tannins to round it out. This Shiraz would be ideal with a flame grilled Porterhouse Steak.This is our flagship Shiraz. Picked from the Chinamans Bend Vineyard in Northern Heathcote, this vineyard sits on the Eastern Slope of Mt Carmel.

This vineyard produces amazing quality fruit every year that results in dark inky Shiraz, with bold dark fruit flavours, mouth filling structure & an abundance of tannin & complexity.

This vintage we invested in new Hungarian Oak to use for the 2020 vintage program. A perfect growing season allowed me to pick on the exact day I wanted.

The fruit was crushed, destemmed, fermented in 2 tonne fermenters for 2 weeks. During this time I did a 3x plunging program per day to allow extraction of structure & tannin. Pressed directly into New Hungarian oak, then a range of French neutral oak, this wine underwent Malolactic fermentation. This lasted the winter, then the wine was sulphured, topped & put to bed.

The resulting wine was outstanding – Big dark and brooding, The Hungarian oak added layers of complex baking spices, that was well supported by the density of dark berry fruits, chocolate & mocha that this wine exhibits, big & complex in mouth with loads of liquorice and spice on the finish.
