Seraphim 2021 Pinot Noir Yarra Valley
The fruit for this 2021 Pinot is purchased from a long time grower, Greg Dunnett, who owns Valley Farm Vineyard, 4km North of Healesville.
With literally a perfect growing season, this Pinot was hand picked on the 3rd March transported to the winery for crush. Upon inspection & tasting the outstanding quality of the fruit – I decided to do a 50% whole bunch fermentation.
Fruit was placed into a 2 tonne fermenter with the 50% whole bunch on the bottom and carefully destemmed fruit on top. The ferment was placed in the cool room for 30hours to induce a cold soak technique that allows extraction of colour & tannin & structure before primary fermentation takes place.
Fermentation got underway with the addition of cultured yeast, followed by plunging the cap threes a time to further extract colour, flavour and structure.
Once fermentation was completed, the ferments were pressed directly into neutral French Oak Hogs heads. These underwent Malolactic fermentation, during winter, then sulphured, topped and put to bed.
The resulting wine truly represents Yarra Valley Pinot Noir, with a beautiful aromatic nose of dark, cherries, red berry fruits & white pepper. The palate is subtly complex with a delicious savoury dark cherry complexity, savoury spice with a nice amount of acid on the finish.
